Well, i had to think hard, had to try to impress foodbuzz and so i came out with this idea! Panic striked right away when my proposal was accepted.. Being Malaysian, all i could think of was all the multicultural-ness Malaysia has to offer, so i decided on hosting a dinner; serving chicken in 4 different cooking styles, Chinese, Indian, Malay and even local Sarawakian food.. (coz.. i live in sarawak, haha), all prepared and cooked by me and my housemates of course.
Well, seriously, i really had to let myself feel the game! can i pull this off..? Haha, i must be crazy eh? But having my two housemates together, they're really a help! thanks anu and mordi!
And so, here's how it went... (better than expected!) Pictures and recipes of all 24 chicken dishes we had;
All 24 chicken dishes of the night! :)
Chinese Cuisine
6 chicken dishes - The Chinese Style!
Chicken soup with winter melon and red dates.
Recipe:
A handful of chicken meat (however u like, cubed, sliced, with/without bones)
2 - 3 tea leaf mushrooms (sliced thinly)
cubed winter melon
chinese red dates
ginger, garlic
salt
Pak loh chicken (with chinese special herbs)
Recipe:
Pak loh herbs (you can easily get this in a store, :) just say the name of the herb.. )
1 - 2 chicken thigh
garlic, ginger and onion (use pestel and mortar to mash it up)
you can add a lil bit of chillie if preferred
salt
Herbal chicken soup
Recipe:
Chicken drumstick or thigh
2 - 3 tea leaf mushroom
1 black fungus (when you soak in water, it'll be three times larger than your palm! hee..)
chinese herbs (i used bakuteh herbs here: contains, ginseng roots, barks, dates etc...)
garlic, ginger, big onion
oyster sauce
soy sauce
Ginger chicken with wine
Recipe:
Chicken flesh (sliced)
a handful of thinly sliced ginger
chinese white wine for gourmet cooking
salt
Chicken mushroom with white wine
Recipe:
sliced chicken meat
Black fungus
tea leaf mushroom
needle mushroom
button mushroom
ginger and garlic
chinese white wine for gourmet cooking
Chicken in salted yellow beans
Recipe:
Sliced chicken meat
finely chopped garlic and ginger
salted yellow beans (you can get this at any store, its in a jar, usually Yeo's brand)
no need salt!
Malay Cuisine
6 chicken dishes - The Malay Style!
Chicken dry sambal
Recipe:
Sliced chicken meat
Chillie paste
Chopped garlic, onion
Stir fry chopped garlic and onion, then add chicken. Let simmer for a few minutes then add chillie paste and plum sauce, leave to thicken and you’re ready to bite bite bite! =)
Chicken 'masak hitam' / in black sauce
Recipe:
Sliced chicken meat
ginger, garlic and red onion (blended together)
chillie as preferred
soy sauce
blended raisins
sugar and salt as preferred
Chicken 'masak merah' / in red sauce
Recipe:
Chicken wings or drumstick
corn flour
salt and pepper
gravy : grinded chillie paste, garlic, big onion, red chillie
Chicken 'percik'
Recipe:
Chicken wings or thighs or drumsticks
Blended onion, garlic and ginger
Chillie paste
Red chillie
Salt and sugar as preferred
Coconut ‘kerisik’ (fried coconut)
Coconut milk
Chicken is marinated with salt and pepper, then place into oven for dry roasting. For gravy: stir fry the onion, garlic and ginger, add red chillie and chillie paste, add coconut kerisik and half a cup of coconut milk. Leave gravy to thicken, pour on chicken when chicken is ready to serve.
Pineapple chicken
Recipe:
Chicken wings or thighs or drumsticks
Pineapple paste (use fresh pineapples, cubed then blended into paste)
Garlic and onion
Salt and sugar as preferred
Spices (cinnamon stick and cardamom)
Chicken is marinated with plum sauce and salt and pepper, dab with corn flour and deep fried and let aside. For gravy; fry garlic, onion and spices, add in pineapple paste and half a cup of water, let to simmer and thicken, add in salt and sugar as preferred. Pour gravy on chicken and you’re ready to go!
Rendang chicken
Recipe:
Sliced chicken meat
garlic, ginger, red onion, big onion and galangal (blended into paste)
Coconut milk
coconut 'kerisik' (fried coconut)
rendang paste
sugar and salt
Tumeric paste
Fry blended paste ingredients and coconut kerisik. Then add in the rendang and tumeric paste. Add chicken and fry a while, pour in coconut milk and leave to simmer. Add in salt as preferred.
Indian Cuisine
6 chicken dishes - The Indian Style!
Chicken in green curry
Recipe:
Chicken meat (cubed)
Green curry (you can get this wet in the market, just say you need green curry, they’ll know what to do.. hehe..)
Mashed potatoes
Finely chopped garlic, onion, ginger
Green chillie
Salt as preferred
Fry finely chopped garlic, onion and ginger, add in the green chillie and fry for 4 to 5 minutes, add in green curry (paste which you add in water) then fry again. Add chicken and mashed potatoes and 1 cup of water. Leave to simmer till cook. Add salt as preferred.
Chicken kurma
Recipe:
Chicken meat (cubed)
Kurma powder
Onion and garlic
Diced potatoes
Raisin paste
Fry onion and garlic, then add in chicken meat. Mix kurma powder with 2 cups of water and raisin paste, then add into the pan. Add in potatoes and simmer till cook. Add in salt as preferred.
Curry chicken and Chicken masala
Recipe for curry chicken:
Chicken meat (cubed)
Potatoes (diced)
2 spoonful of curry powder (you can also use wet curry)
1 teaspoon of chillie powder
Spices (cinnamon, cardamom,
Finely chopped garlic, onion, ginger and chillie
Salt as preferred
Stir fry the finely chopped garlic, onion, ginger and chillie, till brown. Then add chicken and potatoes, fry till chicken meat slightly brown as well, add curry powder & chillie powder and fry again for at least 5 minutes. Add 2 cups of water and leave to simmer. Add salt and your done!
Recipe for chicken masala:
Chicken meat (cubed)
2 large potatoes (diced)
1 big onion (cut into thin slices)
3 tablespoon of chillie powder
Salt
Fry big onion till golden brown then add in chicken. Add in potatoes and fry for another 5 minutes. Add chillie powder and fry again. Add 1 cup of water and leave to simmer till cook. Add salt as preferred.
Chicken dhal
Recipe:
Chicken meat (cubed)
1 cup of dhal (yellow lentils) (soaked overnight)
Diced potaotoes and carrots
Long beans (cut around 4cm long)
Finely chopped garlic, onion, ginger, chillie
3 spoonful of curry powder
1 teaspoon of chillie powder
Boil yellow lentils in a large pot (so that everything else fits in!). When lentils seem soft and a little flaky, add chicken. Leave chicken to boil then add in potatoes, carrots and beans. When all the ingredients are almost cooked, off the flame and take out another pan, stir fry finely chopped garlic, onion, ginger and chillie, then add curry and chillie powder. Stir fry with a little oil and then pour this into the pot containing all the ingredients just now. Leave to simmer. Add salt as preferred. The longer it simmers, the gravy will thicken, so don’t worry if it seems a little watery at first. Good luck!
Spicy Fried Chicken
Recipe:
Chicken wings or drumstick
Curry powder
Salt
Tumeric paste
Curry leaves
Marinate chicken in curry powder, tumeric paste, salt and curry leaves. Leave for 2 to 3 hours. Then, deep fry. Yummy!!
Local Cuisine
6 chicken dishes - Sarawak Style!
Chicken pansuh @ Chicken in bamboo
Recipe:
Bamboo
Tapioca leaves
Chicken meat (cubed)
Salt
Fill the bamboo with tapioca leaves, right to the bottom then add the chicken meat and pour in 2 to 3 teaspoon of salt. Don’t fill the bamboo up, leave some space because this dish will be cooked on a slow fire (you can use your barbecue set for this or can place on the stove if your bamboo is a small one). Add in some water about half the bamboo, close the top part of the bamboo with tapioca leaves as well. Leave to cook. Once cook, serve hot.
Chicken with bamboo shoot
Recipe:
Sliced chicken meat
Bamboo shoots (you can get this in cans nowadays, pretty hard to find fresh bamboo shoots elsewhere.. here, its easy coz we plant them.. hehe)
Garlic and chillie
Black fungus
Baby corn
Stir fry garlic and chillie with chicken meat. Then add in bamboo shoots, black fungus and baby corn. Stir fry for 5 to 6 minutes before adding 1 cup of water. You need to simmer it to let the bamboo shoot cook a little. Serve hot! Enjoy!
Chicken with cucumber leaves and baby corn
Recipe:
Sliced chicken meat
Cucumber leaves
Baby corn
Belacan or shrimp paste
Garlic and red onion
Chillie
Use mortar to grind belacan, garlic, red onion and chillie. Then stir fry this ingredient with chicken meat. Add in cucumber leaves and baby corn once chicken turns golden brown. Add in salt and half a cup of water, let simmer first, then serve.
Dry sambal chicken
Recipe:
Sambal chicken
Chicken meat (cubed)
Coriander shoots
Belacan or shrimp paste
Garlic, red onion
Chillie
Use mortar to grind belacan, garlic, red onion and chillie. Then stir fry this ingredient with the chicken meat. Add in the coriander shoots and stir fry dry for a few minutes before serving.
Chicken soup with tapioca starch
Recipe:
Chicken soup with tapioca starch
Sliced chicken meat
Tapioca starch (from fresh tapioca)
Chillie
Garlic and ginger
Salt as preferred
Use fresh tapioca, grated and boiled over slow fire and put aside. Fry garlic, ginger and chillie with chicken meat, then add in your tapioca starch and water and leave to simmer. Dish is ready when gravy thickens.
Tempoyak chicken @ Chicken with durian paste and local eggplant
Recipe:
Chicken meat (cubed)
Tempoyak (durian paste)
Garlic and chillie
Fry garlic and chillie with chicken meat, add in water and leave to simmer. Add in tempoyak paste and salt as preferred. Dish is ready when gravy thickens.
